The Infusion

Follow these steps to get the best from your infusion:

  • Quantity: 2-2,5 g of tea (or 1 scoop with our perfect cup tea spoon) for a 200 ml cup

  • Water: 80°C

  • Infusion time: 2-3 minutes

Our Tip

To avoid scalding the premium leaves, strictly avoid boiling water ($100°C$). Tie Guan Yin is the undisputed king of multiple infusions. Do not discard the leaves after the first cup! This tea expresses itself best from the second to the fourth infusion: as the jade pearls unfurl, they release ever-changing aromatic nuances, becoming sweeter and more buttery. For subsequent infusions, increase the time by about 30-40 seconds each time.
An extra idea: To fully enjoy the spectacle, prepare it in a glass teapot or a transparent cup. Watching the small rolled leaves slowly open into whole leaves is a fundamental part of the relaxation ritual of this extraordinary tea.
